Cask-Aged Traditional Balsamic

To yield a single bottle (130 grams) of our dark, viscous,
traditional balsamic vinegar, organic grape juice sufficient
to make 50 bottles of wine has been concentrated by evaporation
for a minimum of 12 years.

Our family's estate-grown organic grapes are used in an
artisanal balsamic production, situated in Monticello, New
Mexico (USA). Every step is made lovingly by hand: growing,
pruning, picking, blending, bottling, and labeling.

Only a maximum of 1000 bottles are available for purchase each year.

Every step from grape growing to bottling takes place within
our small, historic adobe village in New Mexico—all within
dedicated, sanitary, inspected and licensed facilities.

Long ageing, casks of seven fragrant woods, selected Italian
organic grapes, age-old crafting methods—together these
elements produce our rare balsamic.
